One version is about taste instead of sight. Some people say the coffee “separated” when the flavor seems split from the water, leaving a thin, weak cup.

Why a Drip Pot Pulls Itself Apart

Sludge and sheen are a filter story.
According to The Coffee Brewing Handbook by Ted R. Lingle of the Specialty Coffee Association, metal mesh filters pass particles smaller than about 50 to 100 microns. A micron is one thousandth of a millimeter, so these are near-invisible dust.
The same handbook says the mesh also lets suspended oils through. Heavy particles sink and light oils rise as the pot stands, a split the book attributes to specific gravity differences.
The handbook also finds that paper filters hold back insoluble solids and most coffee oils, the compounds known as diterpenes.
Paper-brewed drip coffee pours clearer and settles less because of that difference.
Haze has a different trigger: cooling.
Brewed coffee loses some holding power as it cools, and a once-clear pot can cloud over. Fresh, hot coffee shows little of this, and a cooled-down pot shows it plainly.
A few habits make every version easier to see.
Powder-fine grinds create more particles, torn or badly seated filters leak grounds, and overloaded baskets push water around the coffee. Over-extracted brews and long sitting times both make the settling easier to notice.
The burner plate adds its own mark: it keeps cooking the brew and slowly boils water off, concentrating what remains.
