How Long It Takes To Reach The Right Temperature

World Cezve/Ibrik Championship rules require the whole brew, from cold water to peak extraction, to take between 2 and 3.5 minutes. That window comes from a competition standard, not a strict kitchen law.

It still gives you a solid target. If your coffee is ready in under a minute, the heat is probably too high.

Turkish coffee also uses an extra-fine grind, finer than espresso. That grind size is what makes the slow heat rise possible, since coarser grounds would need much longer to release flavor at these temperatures.

That grind size calls for a grinder capable of an extra-fine, powder-like setting, such as a Turkish coffee grinder. Weighing your grounds on a digital coffee scale also keeps the ratio consistent from one brew to the next.

What Happens When The Water Gets Too Hot

Letting Turkish coffee reach a full rolling boil at 100°C (212°F) destroys the foam layer, according to the Turkish Coffee Culture and Research Association. James Hoffmann separately notes that boiling breaks the foam crust before it can fully hold, since the bubbles are fragile once formed.

Once the water crosses into a full boil, extraction speeds up further. That can pull harsh, bitter flavor out of the fine grounds instead of the balanced sweetness a slow brew produces.

This is also why some quick recipes suggest starting with water that’s already hot, close to a boil. That approach skips the gradual foam-building stage the traditional method relies on, and it tends to produce a thinner, less stable foam.
