Why Does My French Press Feels Gritty?

Sand in your coffee is a filtration problem, not a flavor problem. That gritty texture is tiny coffee particles, called fines, slipping past the mesh filter and into your cup.

  1. Grind coarse and even, aiming for uniform flakes with little dust. A common starting recipe is 30 grams of coffee for 500 grams of water, about a 1:15 to 1:17 ratio.
  2. Pour in hot water and let the coffee steep, untouched, for four to five minutes.
  3. Break the crust by stirring the floating mat of grounds once, gently, with a spoon.
  4. Skim the surface with two spoons, lifting off the foam and any floating bits.
  5. Wait five more minutes while the water sits still, so gravity can pull fines down onto the bed.
  6. Rest the plunger so its screen sits just at the surface of the coffee, without pushing down.
  7. Pour slowly and stop early, leaving the last 10-15% of the liquid in the carafe with its sediment.
