Why Does My Pour-Over Is Too Hot?

A scalding first sip is not a brewing mistake, because pour-over is designed to use near-boiling water. The Specialty Coffee Association (SCA) standard puts brew water at 200°F ± 5°F (93°C ± 3°C) where it touches the grounds.

A cup that feels too hot usually has one of three causes. The water ran too hot, the mug and server kept their heat, or the “hot” taste is really harsh extraction.

Which Kind of “Too Hot” Do You Have?

“Too hot” hides two different problems, and they need opposite fixes. The first is strict temperature: the liquid scalds your mouth, yet tastes fine once it rests.

The second is a sharp, bitter edge that survives even after the liquid cools, and it usually has nothing to do with drinking time. That edge gets brewed in by water that was too hot for the beans.

Your Cup Stays Hot Longer Than You Expect
