Colder water simply slows extraction down, so it needs more time to catch up. That time difference is exactly what decides which temperature band fits your routine.

Why Hot Water Doesn’t Work for Cold Brew
Hot or near-boiling water pushes extraction toward the flavor profile of hot-brewed coffee, which defeats the point of brewing cold. This is why the National Coffee Association’s cold brew definition excludes hot water from the process entirely.
Serious Eats’ cold brew testing found that a lower starting temperature produces a smoother cup with less bitterness than a hot start. Higher temperatures raise the extraction rate, and a faster extraction can pull out more bittering compounds along with the desirable ones.
