Why Does My Drip Coffee Is Under-Extracted?

Under-extracted drip coffee almost always sits below the 18% extraction yield that the Specialty Coffee Association defines as the bottom of the ideal 18 to 22% range. Water moved through the grounds without dissolving enough of their flavor, so the cup turns out sour, sharp, thin, or salty instead of sweet and balanced.

James Hoffmann, author of How to Make the Best Coffee at Home, names a too-coarse grind as the most frequent cause in drip brewing. That means one small grinder adjustment usually fixes the problem, often by the very next pot.

What “Under-Extracted” Actually Means

Extraction is the act of dissolving the soluble compounds in roasted coffee into brewing water. Extraction yield measures the share of the ground coffee’s mass that actually ends up dissolved in the cup.

According to the Specialty Coffee Association’s brewing standards, extraction below 18% counts as under-extracted, while 18 to 22% is the accepted ideal window. The compounds that dissolve in the earliest phase of a brew are mostly acids and light aromatics, so a fast or cold extraction leaves the cup dominated by them.

How Under-Extraction Tastes
