Why Does My Drip Coffee Is Over-Extracted?

Bitter, drying drip coffee almost always points to water pulling too much out of your grounds. According to the SCA’s Coffee Brewing Handbook, balanced extraction dissolves 18 to 22 percent of the dry coffee mass into the cup. Push past 22 percent, and the brew turns harsh, bitter, and hollow. What Over-Extracted Drip Coffee Tastes Like

The clearest marker is astringency: a dry, puckering feel across the tongue and cheeks, much like over-steeped black tea.

Six Reasons Drip Coffee Turns Bitter

  1. Your grind is too fine. More surface area gives hot water more to dissolve, and the packed bed slows the flow so water sits longer with the grounds.
  2. The brew drags on too long. A drip brew normally finishes in roughly 4 to 6 minutes, and a bed that keeps dripping well past that keeps pulling harsh compounds.
  3. The water runs too hot. The SCA baseline for drip water is 195 to 205°F (90.5 to 96°C), and hotter water speeds the pull of the harshest compounds.
  4. You use too much water per gram of coffee. A ratio stretched toward 1:19 or 1:20 gives fresh water time to scrub out stubborn bitterness.
  5. Water channels through the bed. Scott Rao notes that a channeled path over-extracts the grounds it touches while the rest of the bed stays underdone, giving a cup that is both bitter and thin.
  6. Your beans are stale or dark roasted. Dark roasts give up their solubles faster than light roasts, and stale beans can brew bitter even when the settings are balanced.

Reason four is the trap that catches the most people. The bitter taste tempts you to use less coffee next time, but less coffee with the same water makes the problem worse, not better.
